Carrot Oatmeal Muffins

Should make 1 dozen muffins.

1 ½ cups Speerville Flour Mill organic all-purpose or Acadia heritage flour
1 cup Speerville Flour Mill Newfound Oatmeal
½ cup Speerville Flour Mill Organic Golden Sugar
1 tbsp aluminum-free baking powder
½ tsp cinnamon or ginger
¼ tsp salt
1 cup milk or water if allergies are an issue
1 egg
¼ cup vegetable oil (same quantity of chia seeds and water will also work)
1 tsp vanilla
¼-½ cup grated carrot
½ cup chopped walnuts (optional)

In separate bowls, mix together the dry and wet ingredients. Combine and spoon into a greased muffin tin.

Bake at 375°for about 20 minutes. Let cool and enjoy.
